Great job Es!


Ah! Today was Esther's violin recital with her teacher Matthew Zerweck. All went well, and we all are very proud of her! She performed a Tango by Kreisler.

Blueberry Oat Pancakes

3 1/2 c. milk
1/4c. melted butter
2 eggs
1/4c. applesauce
2 T. honey
2c. wheat flour
2c. rolled oats
1T. baking powder
1t. baking soda
1t. salt
3 lemons zested
1c. blueberries

Mix together all the ingredients except the blueberries.
Pour batter by 1/4c. onto a hot griddle. Sprinkle with about 5 blueberries. Cook the first side for about 2 min. then flip and give the other side about 2 min. as well.

Serve warm with butter and maple syrup!

Makes 1 1/2-2 dozen pancakes

No-Bake Chocolate Peanut Butter Oatmeal Bars

Well, our oven still is not working! Today I made some sourdough in the roaster oven and it turned out fantastic, this time it's really sour! YUM!!! Okay, well I'm supposed to be talking about these cookie bars......Phil my little brother said he wanted to make some cookies( we have already made no bakes twice:) So I went online to see if I could come up with something else and I found this recipe off someone else's cooking website and thought I'd give them a try. By the time I started making them Phil was now watching a movie and no longer wanted to help......so I just made them by my lone some self, just kidding I do like to bake by myself sometimes:) Wait I guess you wouldn't call it baking....putting together?!?! Now that kind of sounds funny:)

No Bake Chocolate Peanut Butter Oatmeal Bars

Ingredients:

  • 3/4 cup butter
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups quick cooking oats( I used rolled Oats)
  • 1 cup semi-sweet chocolate chips
1/2 cup peanut butter (smooth or chunky)

1. Melt butter in a large sauce pan over low heat. Stir in brown sugar, vanilla, and oats. Cook for 3 to 4 minutes. Press half of mixture in to the bottom of a buttered 8 x 8 dish.

2. In a microwave safe bowl, microwave the chocolate and peanut butter, stirring every 30 seconds until melted and blended. Pour the chocolate peanut butter mixture over the crust, reserving a couple of spoonfuls to drizzle over the top.

3. Sprinkle the remaining oat mixture over the chocolate and peanut butter, pressing gently to form a crust. Drizzle the remaining chocolate and peanut butter over the top of the bars.

4. Refrigerate for 3 hours before cutting and serving.

Its 76 degrees out, and we're loving it!

Sandwich Bread!

This past week I made a batch of Dee's Health Bread( you can find the recipe by clicking on the name), it was scrumptious as always! We have been eating as toast for breakfast and for sandwiches this week. I used sesame seeds, millet, and flax seeds.

Be creative and use what ever seeds you have on hand, don't just follow the directions:)

Gluten Free Millet Bread

Lately we have been making things with different flours, it is good to give your body a break from just using plan wheat flour. This bread is very good but not like your average sandwich bread, the texture and taste is similar to cornbread! It would work fine to use for a sandwich if thats what you won't but it also tasted good toasted with peanut butter for breakfast the other morning. One thing to remember is that the batter is very runny so don't let it rise to long, just until it reaches the top of the pan or you will have over flow problems like I did:) So if are gluten intolerant or not, try this bread it is definitely a winner recipe!

Millet Bread

1 cup buttermilk, or yogurt( I used half milk half cottage cheese)
1/4 cup butter
1 T. honey
1 pkg. active dry yeast
1/4 cup warm water
2 eggs
2 cups millet flour( we have a grain mill so I made my own)
1/2 cup soy flour

Combine buttermilk and butter in sauce pan, heating slowly to make butter melt. Dissolve yeast and honey in water; add milk mixture blend. Beat in eggs; add flours and beat well. Pour into a well oiled 5x8 inch loaf pan and let rise for 45 min. Bake at 375 for 35-40 min. or until loaf sounds hollow when tapped. Cool completely before cutting.
Makes 1 small loaf, about 16 slices.

Chocolate-Caramel Bars


These bars are very chewy! If you like caramel and sweet things these are for you.......I changed the recipe around just because we did not have all the right ingredients, I think they turned out for the better. One thing I changed that tasted good was the pecans, peanuts seemed to really taste wonderful in these even though pecans were part of the original recipe.




Chocolate-Caramel Bars

1 cup flour
1/2 cup brown sugar
1/2 cup butter
2 cups coarsely chopped pecans( I used 1 cup honey roasted peanuts)
1 cup flaked coconut
1 14 oz. can sweetened condensed milk
2 teaspoons vanilla( I left this out)
20 vanilla caramels, unwrapped
2 T. milk
1 cup milk chocolate pieces( I used dark chocolate)

Preheat oven to 350. For crust: In a large bowl mix flour and sugar, cut in butter till mixture resembles coarse crumb. Press into 13x9 inch pan. Baker 15 min. Sprinkle with pecans and coconut over hot crust. Meanwhile for filling in a small bowl combine the condensed milk and vanilla. Carefully pour over pecans and coconut, spreading evenly. Bake for 25-30min. or till filing is set. Cool 10 min. Meanwhile in a small saucepan combine caramels and milk. over medium heat melt till smooth. Drizzle caramel over filling. Sprinkle with chocolate. Cool completely and cut into 24 bars.
