Cranberry Buckle Cake

Cranberry Buckle Coffee Cake
Batter:
3/4c. sugar
4 T. butter
1 egg
1/2 c. milk
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. cardamon
1 tsp. vanilla 
2 c. frozen chopped cranberries
1T. orange zest

Struesel:
3/4 c. sugar
3/4 c. flour
1 tsp. cinnamon
2-3 tsp. orange zest
1/2 tsp. salt
5 1/3 T. soft butter

Grease a 9x9 pan. Heat oven to 375. Batter: Cream together the sugar and butter, then add the egg and mix at medium speed for 1 min. Whisk together the dry ingredients. Stir in the milk alternately with the dry ingredients and vanilla, scrapping the sides down as you go. Gently fold in cranberries. Spread in pan. Struesel: in a bowl whisk sugar and flour,cinnamon,lemon and salt add butter mix to make a crumb. Sprinkle evenly over batter. Bake for 45-50 min or until done.


Varriation: use lemon zest in place of the orange zest.  And fresh or frozen blueberries in place of the cranberries!

Peanut Butter Chocolate Muffins

Chocolate Peanut Butter Coffee Cake
Topping:
1/2 cup packed brown sugar
1/4 cup all-purpose flour
1/4c. oats
1/4 cup peanut butter crunchy
3 tablespoons margarine or butter
1/4 cup miniature semisweet chocolate pieces
Cake
2 cups all-purpose flour
1 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1cup milk
1/2 cup peanut butter
2 eggs
1/4 cup margarine or butter
1/2 cup miniature semisweet chocolate pieces
For topping, in a bowl stir together 1/2 cup brown sugar and 1/2 cup all-purpose flour; cut in 1/4 cup peanut butter and 3 tablespoons margarine or butter till crumbly, add 1/4 cup miniature semisweet chocolate pieces and stir--set aside
In a bowl stir together 2 cups flour, 1 cup brown sugar, the baking powder, baking soda, and salt. Add milk, 1/2 cup peanut butter, the eggs, and 1/4 cup margarine or butter. Beat with an electric mixer on low speed til blended. Beat at high speed for 3 minutes, scraping the sides of the bowl frequently. Stir 1/2 cup miniature semi-sweet chocolate pieces into the batter after beating.
Pour batter into a greased muffin tins. . Sprinkle with topping mixture. Bake in a 375 oven about 30 minutes or till a toothpick inserted near the center comes out clean. Serve warm or cool (serves 16)

TWD~

Goodbye TWD!
Well if you've come by to see Tuesdays with Dorie, you won't be seeing it anymore.............Esther and I haven't much time for Tuesday's with Dorie anymore, though it was fun, and we love her recipes immensly!

We will still be putting recipes on here though, so stop by anytime!

The Recipe

Mamie's Coffee Cake

Mix 2 1/2 cups flour, 3/4 cup sugar, 1 cup brown sugar, 1 teaspoon nutmeg, 1 teaspoon salt and 3/4 cup salad oil in a bowl until crumbling and thoroughly blended.  Take out 3/4 cup of this mixture and put in a small bowl with 1/2 cup pecans and 2 teaspoons cinnamon -- set aside.

To the remaining add 1 cup buttermilk, 1 egg and 1 teaspoon baking soda.  Pour into a 9 X 13 baking dish and sprinkle the topping over the batter.

Bake at 350 degrees for 30 minutes.

Meanwhile -- combine 1 cup powdered sugar, 1/4 teaspoon vanilla and a couple tablespoons of water (enough to mix and make a pour-able icing).

Pour icing over the coffee cake the minute it comes out of the oven -- while it is still hot.
