Fresh Mango Bread


Yesterday upon find that we had several mango's needing to be used up I made this yummy bread from Dorie's cook book called"Baking from my home to yours". I was a little worried because the batter was very dry and there was also a lot of it. It baked up nicely and I gave some to my violin teacher who said it smelled very good, I'll have to ask her how she liked it next lesson:) It was very sweet but good, I loved the idea a ginger, it is also supposed to have golden raisins and lime zest which I did not have so just skipped out. Next time I would add some chopped macadamia nuts to the top but other then that it was very good!

Fresh Mango Bread

Cooks Note: As good as this bread is freshly baked, I think it's even better the next day. One day spent wrapped in plastic seems to intensify the fruit and spice flavors. Of course, if you can't wait, don't. Just cut the loaf into thick slices and serve with tea, hot or iced or coffee!

Serves:12
3 eggs
3/4 cup canola oil
2 1/2 cups flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup brown sugar
2 cups diced mango( from 1 large peeled and pitted mango

Heat oven to 350. Grease and flour a 81/2 x41/2 inch loaf pan. Whisk together sugar and eggs. Next whisk in all other ingredients except mango. The batter will be very stiff, fold in mango. Spoon into loaf pan and bake for 1 15min-1 1/2 hrs. or until golden brown and knife comes out clean.( If bread looks as if its getting to brown when its baking tent with foil) Cool 5 min. in pan. Remove and let cool before baking

Frozen Banana yogurt with salted peanut butter and maple topping

PB and Banana Frozen Yogurt

1/2 c. frozen yogurt(I took our homemade yogurt, sweetened it and added mashed banana and put into our ice cream maker)
1 T. natural peanut butter
1 T. maple syrup
1/2 small banana, sliced
pinch of coarsely ground sea salt

Place yogurt in bowl. Mix pb and maple syrup together till blended. Pour over yogurt and sprinkle with salt and sliced bananas.
Serves 1

Baba Ganoush

Ingredients:
  • 2 medium sized eggplants
  • 1 lemon, juiced
  • 3 Tbsp. tahini
  • 1 tsp. salt (add more to taste)
  • 1/4 tsp. pepper
  • 3 Tbsp. olive oil
  • 3 cloves of garlic, crushed
  • parsley for garnish

*Serve with pita bread, sliced baguette, veggies for dipping

Directions:

1) Preheat oven to 450 degrees.

2) Using a fork, prick the eggplants (like 5 or 6 pricks all around). Place eggplants on baking sheet. Bake for 40-45 minutes. Take out of oven, let rest for 10 minutes. Cut in half and scoop out eggplant flesh with a spoon.

3) In a food processor, or mixing bowl, add eggplant, lemon, tahini, salt, pepper, olive oil and crushed garlic. Mix until well blended. Chill for at least one hour before serving. Drizzle with olive oil, sprinkle with parsley and serve with bread or veggies.

Who said PB and J was just for lunch?

This version of oatmeal is sure to be a favorite in your family as it is in ours! Who can resist the creaminess of peanut butter and homemade strawberry jam on oatmeal for a hearty healthy breakfast?

Mint Kiss Brownies

We made these delicious brownies for church a few weeks ago, and thought we'd share the love!

21/4c. flour
1/2c. cocoa powder
2 eggs
1/2 c. oil
1c. applesauce
1/4c. water
1/2t. salt
1c. chopped mint kisses.

Mix together all the ingredients except mint kisses. Fold in mint kisses. Pour batter into a 13x9in. pan. Bake for 25min. at 350. Brownies are done when knife comes out clean, its fine to have a few crumbs sticking to it.

Cool well, then cut into 36 small squares.

Family Favorite Oatmeal






Family Favorite Baked Oatmeal
Serves 8



5 apples peeled and thinly slices

1/4c. oil
1/4c. applesauce
2 1/2c. milk
1T. vanilla
1/3c. honey
1T. cinnamon
3c. oats
2t. baking powder
1t. salt

1/2c. chopped walnuts


Preheat your oven to 350. Place you apple slices into a greased 9x9in. baking dish.
In a large bowl, mix together the oil, applesauce milk, vanilla, and honey. Next add the remaining dry ingredients, and mix well.
Pour your oat batter onto the apples in the baking dish, sprikle with the walnuts. Place in the oven, and bake for approx. 30-45 min. depending on how crunchy you like the top!
Serve as is, or with maple syrup!





Note: If you like to have yours with milk, reduce the milk in the recipe by 1/2c.

Banana Ice Cream

Yesterday evening for dinner Hannah and I made this scrumptious dairy free ice cream. You may be wondering why we had ice cream for dinner? Well, me( Esther) had my wisdom teeth out on Thursday so I'm on soft foods for a while:) So far so good, not to much pain, just a little swelling. Some other foods I have been enjoying have been, chicken broth a coconut,mango, pineapple smoothie and this morning Hannah made a creamy oatmeal pudding! I really like smoothies so it has not been really that bad:)



2 frozen bananas
1 T. peanut butter
1 T honey
1/2 tsp. vanilla

Blend bananas till really creamy. Top with melted peanut butter, honey and vanilla. Serves 2

Asian Lettuce Wrap


1 leaf of romaine lettuce
5 asparagus spears cooked
1/4c. kelp noodles
1T. crumbles goat cheese
1t. tahini

Pile the asparagus and kelp noodles onto lettuce leaf. Top with goat cheese, and tahini...............served with soy sauce for dipping.

Hummus

We both just love hummus! Some times I like to make very different flavored hummus but this time I felt like some traditional stuff:)

Place 1 can 15 1/2 0z. of chickpeas in a food processor with the juice of 1 lemons, 3 minced garlic cloves, and 2 or 3 tablespoons of the cooking liquid. Process until smooth. Add 1 tablespoon olive oil, 2 T. tahini, and salt. Process. Transfer to a bowl and sprinkle with 2 tablespoons chopped parsley. (I first drizzled some good olive oil over the top before sprinkling with the parsley.) Serve with toasted pita. Yield: about 1-1/2 cups.

Zucchini Apple Muffins


These muffins are a great snack, and the only sweetener they have is molasses!


Zucchini Apple Muffins

Recipe:
1 1/2 cups white whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 1/2 tsp cinnamon
1 tsp ginger
1/3 tsp nutmeg
2 eggs
2/3 cup unsulphured molasses
1 apple, peeled and finely diced
1 small zucchini, grated
1/2 cup walnuts, chopped
1/4 cup oil

Line a muffin pan with 12 paper liners, and preheat the oven to 350 F.

Combine the flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg in a large bowl and mix with a wire whisk.

Stir the eggs, molasses, apple, zucchini, walnuts, and oil together in a medium bowl, then pour into the flour mixture.
Stir gently with a wooden spoon until mixed, then divide among muffin tins and bake for about 17 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.

Cool on a wire rack

Muhammara Dip



Our friend found this great looking recipe from Elizabeth Ann Designs and thought that we would enjoy trying it! We finally got around to making it for dinner to accompany our Kofta Kebobs. It was delicious topped on our salad. You can also use it as a spread for bread as in the pictures above. Or as a dip for veggies.





Muhammara Dip

1 12-ounce jar roasted red bell peppers, drained 1 cup walnuts 1/3 cup panko (Japanese breadcrumbs) 2 tablespoons extra-virgin olive oil 2 teaspoons pomegranate molasses or fresh lemon juice 1/2 teaspoon ground cumin (optional) 1/4 teaspoon cayenne pepper Pita chips, warm pita bread, or veggies for serving

1. Blend all ingredients except pita chips in processor until coarse puree forms. Season with salt.

2. Transfer to bowl; serve with chips, pita, or veggies.

1c. Sweet Cherries frozen
1c. Mango frozen
1 1/2 Banana frozen
1/4c. coconut milk frozen
1/2c. water
1/4c. Pineapple Coconut juice

Blend till smooth and enjoy! Serves 2 very large glasses.

Chocolate Chunk Banana Oat Cookies

Banana Oat Cookies


1/2 cup butter,softened
1/4 cup honey
1 cup banana, mashed
1 teaspoon vanilla extract
1/4 cup unsweetened apple sauce
2 cups rolled oats
1/3 cup almond meal (almond slices + food processor for a few pulses)
1/3 cup flax seeds
1/3 cup coconut, finely shredded & sweetened
1/4 teaspoon fine grain sea salt
1 teaspoon baking powder
1/2 cup dark chocolate chips


Preheat oven to 350 degrees, racks in the top third.

In a large bowl combine the bananas,butter, vanilla extract, honey and apple sauce. Set aside. In another bowl whisk together the oats, almond meal, flax seeds, shredded coconut, salt, and baking powder. Add the dry ingredients to the wet ingredients and stir until combined. Fold in the chocolate chunks. Drop Tablespoon-fulls, onto a Silpat lined baking sheet. Bake for 12 - 14 minutes.

Makes about 2.5 dozen bite-sized cookies.
