TWD Sweet Potato Muffins!


We really enjoyed these muffins! We did change it around a little we used mashed sweet potato's instead of pumpkin, olive oil instead of butter, cranberries instead of raisins, and added walnuts. Next time we make it we are going to try it with pumpkin, whole wheat flour and maple syrup for the sweetener! We will put up that version if it turns out.

i prefer sweet potato pie to pumpkin pie, so i'll bet these were really delicious! great idea, i'm noting this alternative in my cookbook.

Another one with Sweet Potatoes. Bet they were good. They look great. I used cranberries too. Let us know how the other recipe works out.

Wow! I'm totally intrigued at the olive oil. Did it leave an EVOO-esque flavor? Could you even taste it in the final product? Awesome choice, ladies!

mmm, those sound good with sweet potatoes! Great job, and I'll bet the pumpkin version will be delicious as well. I've been baking with the lighter flavor olive oil a lot lately.
