Tropical Apple Muffins with Cinnamon Honey Butter


Muffins

3/4 c. milk

1/2c. coconut oil

1/2c. honey

1 egg

1/2 t. vanilla or cinnamon extract

2c. whole wheat flour ( I used 1/2 barley and 1/2 wheat)

1 1/2 t. baking powder

3/4 t. baking soda

1/2t. cinnamon

3/4c. chopped apple

1/4c. macadamia nuts

1/4c. coconut




In a bowl with a wire whisk, mix together the wet ingredients. Add the dry, then fold in the apple. Put batter into 9 greased muffin tins. Sprinkle with nuts and coconut. ( your tins will be VERY full!) Bake at 375 for 20min.Or till browned. Cool 10 min. then remove from pan. Serve with Cinnamon Honey Butter( Opt.)


Honey Butter

1/4-1/3c. butter softened a little
1T. honey
1/4-1/2t. cinnamon


Mix these together and serve on split muffins!

Chocolate Chunkers! TWD



Oh my were these so delicious! We all absolutely loved these chunky cookies. Though we did make a few changes; instead of the raisins, and nuts, we put in chopped chocolate covered coffee beans, and we also added 1T. instant espresso!

We will definitely be making these again!

Cranberry Walnut Scones

2 1/2 cups flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 cup (1 stick) butter
1/4c. sour cream
1/2c. dries cranberries
1/2c. chopped walnuts
1/3 cup heavy cream
Preheat oven to 375ºF. Line a baking sheet with parchment paper. In a large bowl, combine flour, sugar, baking powder and salt. Using a pastry blender (or two knives) cut in butter until mixture is crumbly. Add sour cream and cranberries and nuts, stirring to combine. Add cream, stirring just until dry ingredients are moistened. On a lightly floured surface, roll dough to 3/4 in. thickness. Using a 2 1/2 inch biscuit cutter cut the scones. Place scones on prepared baking sheet. Bake 13 to 15 minutes, or until golden brown. Makes about 1 dozen scones.

Not Your Average Scone

The other afternoon, my sister and I had fun changing a Cranberry Almond scone recipe into something a little more exotic:-) Try it out!

"Not Your Average Scone"

2 1/2 c. flour
1/2 c. cocoa powder
1T. baking powder
1/2t. salt
1/3-1/2 c. sugar
2T butter
3T. peanut butter
1t. vanilla
1/2c. chocolate chips
1/2c. Rees Pb cups chopped up
2/3 c. chocolate or regular milk

Mix all the dry ingredients together in a bowl. Cut int he butter and Pb till there are only small chunks (meal consistency) Mix in the Pb cups and chocolate chips. Stir in milk and vanilla just till combined. Shape
into 2- 6in circles. Approx 3/4in. thick. Cut each circle into 6 wedges. ( I chopped up a few extra Rees cups and put them on top!) Bake at 350 for 10-13min. Cool and serve!
