Day 3 of Oatmeal
Tropical Oatmeal
3c. Oats
6c. water
pinch of kosher salt
1T. Freshly grated ginger
1/2c. chopped dried apricots
1/3c. chopped cashews
1/4c. coconut
Heat the water till boiling add the salt, ginger and oats. Cook till all the water is absorbed and. Divide into 6 bowls, and top with remaining ingredients. Serve with a little maple syrup, or brown sugar.

OH! I love coconut. I never thought about putting it in oatmeal. I usually just like apples with brown sugar in my oatmeal. Sometimes butter and brown sugar.
I'm gonna try this tho :)
Oatmeal is my favorite way to enjoy oats. This tropical oatmeal sounds good!
