Rasapple Pb Crunch Muffin

1 Homemade Sour Dough English Muffin (or what ever kind you prefer!)( Recipe to be posted soon)
1 1/2t.-1T. Organic Peanut butter
1T. Homemade Granola
1/2 an apple peeled and thinly sliced
1t. cinnamon
1 1/2t.-1T. honey ( how sweet are you?)
5 big fat juicy raspberries
1T. Chopped walnuts



Put your sliced apple in a saucepan with the cinnamon and honey.
Cook till el dente. Toast you muffin. Then spread with the Pb. Top with the apples, and sprinkle with nuts and granola.................don't forget the raspberries:-)
Serve with a steaming cup of tea..........................

Mediterranean Lunch


Last week sometime, I decided that I was feeling Mediterranean. So I made Esther and I a Mediterranean lunch.
Hummus is great served with cut veggies and crackers.

Garlic Sundried Tomato Hummus

1/4-1/3c. Sundried tomatoes
1 can of drained Chickpeas
1/4t. Salt and Pepper (more or less to taste)
a pinch of Cayenne Pepper
1/3c. Tahini
1T. Olive oil

Garlic top-
4 cloves of garlic sauteed in a pan with a little oil till browned, and crunchy. (this would be enough garlic for 2 people)


Put all of the ingredients in a blender till smooth. Top with garlic.
Yields: 3c. hummus

Bread dipping oil


3T. olive oil
4 cloves of garlic
1T. fresh basil
Dash of pepper, salt, and red pepper


Saute garlic in 1t. of oil. Remove and stir in remaining ingredients. Serve!
This is great served with french bread, and Spaghetti!
