Banana ice cream


Mmm. I made this for lunch, but just added fresh stawberrie puree to the top. If you scroll down you will find the recipe for the banana ice cream!

Frozen Banana yogurt with salted peanut butter and maple topping

PB and Banana Frozen Yogurt

1/2 c. frozen yogurt(I took our homemade yogurt, sweetened it and added mashed banana and put into our ice cream maker)
1 T. natural peanut butter
1 T. maple syrup
1/2 small banana, sliced
pinch of coarsely ground sea salt

Place yogurt in bowl. Mix pb and maple syrup together till blended. Pour over yogurt and sprinkle with salt and sliced bananas.
Serves 1

Baba Ganoush

Ingredients:
  • 2 medium sized eggplants
  • 1 lemon, juiced
  • 3 Tbsp. tahini
  • 1 tsp. salt (add more to taste)
  • 1/4 tsp. pepper
  • 3 Tbsp. olive oil
  • 3 cloves of garlic, crushed
  • parsley for garnish

*Serve with pita bread, sliced baguette, veggies for dipping

Directions:

1) Preheat oven to 450 degrees.

2) Using a fork, prick the eggplants (like 5 or 6 pricks all around). Place eggplants on baking sheet. Bake for 40-45 minutes. Take out of oven, let rest for 10 minutes. Cut in half and scoop out eggplant flesh with a spoon.

3) In a food processor, or mixing bowl, add eggplant, lemon, tahini, salt, pepper, olive oil and crushed garlic. Mix until well blended. Chill for at least one hour before serving. Drizzle with olive oil, sprinkle with parsley and serve with bread or veggies.

Mint Kiss Brownies

We made these delicious brownies for church a few weeks ago, and thought we'd share the love!

21/4c. flour
1/2c. cocoa powder
2 eggs
1/2 c. oil
1c. applesauce
1/4c. water
1/2t. salt
1c. chopped mint kisses.

Mix together all the ingredients except mint kisses. Fold in mint kisses. Pour batter into a 13x9in. pan. Bake for 25min. at 350. Brownies are done when knife comes out clean, its fine to have a few crumbs sticking to it.

Cool well, then cut into 36 small squares.

Family Favorite Oatmeal






Family Favorite Baked Oatmeal
Serves 8



5 apples peeled and thinly slices

1/4c. oil
1/4c. applesauce
2 1/2c. milk
1T. vanilla
1/3c. honey
1T. cinnamon
3c. oats
2t. baking powder
1t. salt

1/2c. chopped walnuts


Preheat your oven to 350. Place you apple slices into a greased 9x9in. baking dish.
In a large bowl, mix together the oil, applesauce milk, vanilla, and honey. Next add the remaining dry ingredients, and mix well.
Pour your oat batter onto the apples in the baking dish, sprikle with the walnuts. Place in the oven, and bake for approx. 30-45 min. depending on how crunchy you like the top!
Serve as is, or with maple syrup!





Note: If you like to have yours with milk, reduce the milk in the recipe by 1/2c.

Banana Ice Cream

Yesterday evening for dinner Hannah and I made this scrumptious dairy free ice cream. You may be wondering why we had ice cream for dinner? Well, me( Esther) had my wisdom teeth out on Thursday so I'm on soft foods for a while:) So far so good, not to much pain, just a little swelling. Some other foods I have been enjoying have been, chicken broth a coconut,mango, pineapple smoothie and this morning Hannah made a creamy oatmeal pudding! I really like smoothies so it has not been really that bad:)



2 frozen bananas
1 T. peanut butter
1 T honey
1/2 tsp. vanilla

Blend bananas till really creamy. Top with melted peanut butter, honey and vanilla. Serves 2
