Last month we experimented with a gluten free chocolate chip cookie recipe and after letting them sit for a day the texture became very mealy and when you picked them up they crumbled! Not being satisfied with that recipe we decided to try a new version of a gluten free chocolate chip cookie, so far after letting them sit for a day and also freezing them they have kept a very good flavor and texture!!! Of course you can't have a chocolate chip cookie straight from the oven with out some milk?!?! But because of our dairy restrictions right now we had almond milk, close to cows milk but not the same:( So now for the winner recipe.......see below the picture!
Chocolate Chip Cookies
3/4 c. brown rice flour
1/2 c. tapioca flour
1/4 c. potato starch
1 tsp. baking soda
1/2 tsp. xanthan gum
1/4 tsp. salt
1/4 c. butter or coconut butter
1/2 c. xylatol or agave
2 tsp. vanilla extract
1 egg
1 c. chocolate chips
Mix flours, baking soda salt and xathan gum together. In a large bowl beat butter, sweetener of choice, vanilla and egg. Beat in flour mixture on low speed; mix well. Stir in chocolate chips. Drop by tablespoonful onto buttered cookie sheet. Press them down to 1/2 inch thickness. Bake 10-12 min. at 350. Cool 2-3 min. before removing from cookie sheet. Makes 24 cookies.
