Gluten Free Chocolate Chip Cookies


This coming week our family has been getting ready for vacation, some of things we do to save money is make our own snack foods. Hannah thought that having some home-made cookies would be nice, so she made your 'regular cookies' that have the good stuff like gluten and sugar in them for the rest of our family:) But of course that would mean no little goodies for us to have while making the long car trip up north, so she found a gluten free cookie recipe that we had all the ingredients for, yay! They don't taste like 'normal' chocolate chip cookies, but still they are very yummy. We changed the recipe around from the original by using agave instead of sugar, and using our own home-made chocolate chips. If you wanted to make them without butter, try coconut butter/oil, it should work just the same!

Mom’s Chocolate Chip Cookies
Adapted from Celiac Teen
1 (1/2 cup) stick butter, softened
1/3cup agave
1 egg
1 tsp vanilla
1/3 cup millet flour
1/2 cup tapioca flour
2 tbsp brown rice flour
2 tbsp quinoa flour
1/2 tsp xanthan gum
1/2 tsp baking soda
1/4 tsp salt
1 cup chocolate chips

Steps

Preheat oven to 375 degrees Fahrenheit.

Cream butter and agave together in a large bowl. Beat in egg and vanilla.

In a second bowl, whisk together dry ingredients (all but the chocolate chips). Dump dry ingredients into butter mixture, and stir slowly until incorporated. Stir in chocolate chips.

Drop tablespoonfuls of dough onto silpat-lined

cookie sheet. Bake for 10 to 12 minutes, until browned and done.

Home made chocolate chips? What do you put in those? The only form of sweetner I am eating right now is Stevia...I have tried making chocolate with that but it turns out extremely bitter.

We make our chocolate chips by, either melting butter or coconut oil, adding cocoa powder, and agave then freezing till hard. Chop and add to your cookie dough!

We have never tried chocolate with stevia, but we don't care for the flavor it gives to anything:-)
